Carribbean Shrimp Fritters

If you like fresh fritters of any kind,
and you like seafood of any kind,
these seafood fritters are to die for.

Ingredients:
2 pounds 26-30ct. shrimp, peeled and deveined; cut in half
1-1/4 cups flour
1 egg
2/3 cup milk
cayenne pepper, to taste
red pepper flakes, to taste
salt and pepper to taste
oil, for frying
1/2 onion, finely chopped
1/2 yellow bell pepper, finely chopped
1/2 red bell pepper, finely chopped
2 stalks celery, finely chopped
3 cloves garlic, finely chopped
Fresh lemon and lime

Directions:
Mix flour, egg, milk, cayenne, red pepper flakes,
and salt until slightly thick batter forms.
Add shrimp, bell pepper, onion, celery and garlic.
Heat oil to 375 degrees.
Drop spoonful of shrimp batter into oil.
Fry until golden brown. Drain on paper towels.
Season with salt and pepper if desired.
Serve hot with fresh lemon and lime
and a citrus dipping sauce.
