Bacon Jam

This jam is good on burgers and hot dogs.
It's salty sweetness compliments everything.
Some people make this in a slow cooker.

Ingredients:
1 lb smoked bacon, cut into 1/4" slices
4 garlic cloves, peeled and minced
1 onion, peeled and sliced
3 tablespoons dark brown sugar
2 teaspoons Sriracha hot pepper sauce
1 cup dark brewed coffee
1/4 cup apple cider vinegar
1/4 cup real maple syrup
1/4 teaspoon ground black pepper
1/4 cup cold water

Directions:
Fry bacon in a skillet until beginning to crisp up.
remove bacon and drain most of the rendered fat.
Add the onion and garlic in skillet to soften.
Add the cooked bacon in skillet with onion and garlic,
and add the brown sugar, Sriracha sauce, coffee,
vinegar, maple syrup, black pepper and cold water.
Simmer for 2 hours stirring often until liquid reduces.
Let cool and pulse in food processor to make jam.
Serve or save in an air tight jar, refrigerated.
