Baked Eggs in Avocado

This is so easy to make and tastes great.
Along with an English muffin or bagel to
soak up some of the yummy runny egg yolks.

Ingredients:
2 avocados
4 large eggs
1/2 lime
salt to taste
freshly ground black pepper
butter if desired

Directions:
Preheat oven to 425 F.
Split avocados in half and remove the pit.
Place avocado halves on a foil lined baking dish.
Drizzle each with a little lime juice and season
with salt and freshly ground black pepper to taste.
Crack one egg into each avocado halve and bake
for about 15 minutes or until whites are set.
I like to serve this with a pat of butter.
